Begin by frying the sliced onions, bell peppers, and garlic.

Add the tomatoes, stock, bay leaves, and smoked paprika, followed by the butter beans, thyme, and lemon zest.

After cooking for  20-30 minutes,  add the spinach  and allow to wilt  down in the pan.

Adjust the seasoning then serve with rice and fresh parsley!
