Roasted peas? As in the green ones you have lying around at the bottom of the freezer? Yessir. 👇
With the right treatment (and it's not exactly difficult), these vibrant little legumes can be transformed into a crispy snack that's tasty, vegan, and gluten-free.

Can you roast peas?
Roasting peas is a great way to add extra texture and flavour to them. Once they've been allowed to cool slightly, they'll go nice and crispy.
Which peas are best?
I've used frozen 'garden' peas, which are larger than petits pois and so have a bit more substance once roasted.
If using petits pois, bear in mind that these are smaller and will roast more quickly.
Either way, frozen peas are a great ingredient that I often use in my recipes – this green pea hummus being a good example.
Are roasted peas good for you?
This recipe includes a little oil and salt, however the green peas themselves are a great source of plant-based protein, fibre, and vitamin C. Peas have been shown to have numerous health benefits that support the heart, digestive system, and immune system.

What you'll need
While you could add any seasonings you like, the basic recipe for roasting peas couldn't be much easier. You'll need:
- Frozen green peas a.k.a. garden peas
- Olive oil or another cooking oil
- Salt (I like sea salt flakes)
How to roast green peas
Preheat the oven to 180°C (360°F).
Defrost the peas by running under water in a colander then spread them out on a kitchen towel. Gently pat dry to remove as much excess water as possible.
If you have time, simply leave them to dry on their own (15 minutes if already thawed / a couple of hours from frozen).
Drizzle the oil over a baking sheet. Add the green peas, sprinkle with salt, and shake gently to create an even layer.
Roast in the oven for 15-20 minutes, shaking the pan regularly.
You'll notice that the peas on the outside of the pan cook more quickly than those in the middle, so it's important to move them around.
At the 20-minute mark, check the peas to see how they're doing and continue to roast for up to 10 more minutes if you want them crispier (being careful not to overcook).
Once crispy, remove from the oven and allow to cool slightly before eating.
Recipe FAQ
The peas will cook slightly faster in an air fryer, so check them after 10 minutes and remember to give the basket a good shake every now and then.
I haven't actually tried it myself, but I'm sure it would work just fine since you can eat fresh peas straight from the pod without pre-cooking. The cooking time may vary slightly so just keep an eye on them.
Yes, peas are a legume and naturally gluten-free.
Allow the roasted peas to cool before storing in an airtight container for up to several days. They'll be at their best just after roasting.
Seasoning suggestions for roasted peas
After 15 minutes or so, feel free to add any ground spices or dried herbs to the peas. Suggestions include paprika, ground cumin, garlic powder, or dried mint – half a teaspoon of these should be plenty.
Shake to coat and return to the oven for the remaining cooking time.

how about adding a bit of flower and baking powder to coat the peas before roasting, to make them extra crispy?

Hi there, it's not something I've tried myself but I'd be keen to hear how it turns out!

not good, since the flower forced a good part of the moisture to stay inside the peas, making them soggy
